This recipe was requested by a dear friend of mine. I hate to use packaged taco seasoning so I usually make my own mix of spices to use in this recipe. I made beef and pork
Beef, pork, or chicken Fajitas
1/2 pound flank steak, 2 chicken breast, or 2 boneless pork chops
3 peppers (I used two green and an orange)
1 large onion
2T sage, fresh or dried
1t chili powder
1/2t cayenne pepper
salt and pepper
1T olive oil
Slice meat thinly and set aside.
On a different cutting board, slice vegetable in 1/4 inch slices.
Heat olive oil on medium heat in a large skillet. Add meat, and all spices to the pan and cook until meat is fully cooked
Remove meat from pan and add sliced vegetables. Cook until vegetables have softened but are not completely limp. They should still have a little bit of bite.
To serve, I push the veggies aside and put the meat back in the hot pan. I serve these fajitas with Don Poncho corn and flour blend tortillas.
