Cake Cookies

One of my favorite things to make recently is cake cookies. Did you know you can make cookies out of virtually any cake mix? Instead of using 3 eggs, water and oil, cut down the eggs to 2 and only add 1/3c of oil. I have used this method to make zillions (okay, NOT zillions but a lot) of different combinations of cookies. Devils food cake with coconut oil instead of vegetable, funfetti with m&ms, red velvet with almonds and my absolute favorite devils food cake with chocolate chips. Try them!! Much easier than making cookies from scratch and the cookies turn out puffy and delicious! Bake at 350 for about 7-9 minutes. I use a melon baller to make all of the cookies uniform size.
