Spicy pork noodles in peanut sauce

I started the night wanting to make spring rolls but, as usual, the spring roll wrappers were a flop.  So it left me with saimen noodles, carrots, thinly sliced pork and green onions, and a peanut sauce. May as well mix it all together.

Spicy pork noodles in peanut sauce

4 oz saimen noodles, cooked and cooled
2 green onions chopped
2 carrots julienned or thinly sliced
8oz thinly sliced pork loin (I used some of the pork roast I made last night. Great way to use leftovers)
1/8c chopped peanuts or cashews

For the sauce
1/8c peanut butter
1/4 c soy sauce
2T corn starch
4T sesame seeds
3T hoisen sauce
Red pepper flakes. Tread lightly

Mix sauce ingredients and set aside.  Mix all other ingredients in a large bowl and set aside.
Heat a large pan or a wok on medium heat. Add enough oil to coat the bottom. Add sauce to pan and then add noodle mix. Mix with tongs until warmed through. Usually takes only a few minutes.
