One of my favorite dishes ever is pho, vietnemese soup. This is my fallback broth recipe.
1 quart beef broth
1 medium onion, quartered
2-inch piece of fresh ginger, halved lengthwise
1 cinnamon sticks
1 tablespoon coriander seeds
1 tablespoon fennel seeds
3 star anise or 1 teaspoon of the seeds
A few whole cloves
1 1/2 tablespoons salt
A few dashes of fish sauce
In a large pot add all ingredients and simmer for 30 minutes. Strain all ingredients and add broth back to pot. We usually just add thinly sliced beef, jalapenos and wontons. You can always add cilantro, bean sprouts and many other ingredients but I like to keep it simple.
