Honey mustard pork roast

I love pork. I love pork even more when the recipe has only a few ingredients.  I used to cook our pork loins for so long it ended up being pork jerky. Cook to an internal temp of 145. This recipe is simple and can be eaten anytime of the year if you have a BBQ. It might be a little cold outside but what better time to use the BBQ? I'm sure you can cook the roast in the oven but I'm not positive on cook time. I'm sure the temperature would be somewhere in the neighborhood of 375.

Honey Mustard pork roast

one 3lb pork loin roast
1/2c mayonnaise
2t dry ground mustard
1t salt
1t pepper
1/4c honey

Mix mayo, mustard, salt, pepper and honey in a small bowl. Let sit for about 10+ minutes. I usually make the marinade and then prep the pork. Set aside about 1/4 of the marinade and use the remaining marinade to rub all over the roast. Sometimes I use a sharp knife to poke small holes so the marinade can get deep into the pork. Let pork rest with marinade for about 30 minutes. This is a good time to heat the BBQ to high heat (around 600-700). BBQ pork for 20 minutes on one side. Flip pork over and spread 1/2 the remaining marinade on the pork. Wait ten minutes and then add the rest of the marinade and cook for about 10 more minutes. Remove pork when it is about 145 internal temperature and cover it with foil. Let rest for about 10 minutes. This is very important! All the juices will run out if you cut the roast too quickly.

I served the pork roast with roasted Kale and green salad.
